Weekend

Hey You Guys!!!

Happy Monday. I hope you enjoyed a fantastic fun filled weekend, or at least a pretty good one. Mine was pretty good. The rain put a damper on the baseball plans. Rain=muddy field=no baseball games. So instead, we spent all of Friday sitting at home watching march madness and eating some delicious Domino's Pizza. Weekend well spent:) I also slept for about three hours. Karl was kind enough not to wake me up, but got really excited when I did wake up because we got to play! It was cute:)

Saturday was super fun. We headed down to Bountiful for a fun visit with my parents and Dash Dash( if my apartment allowed pets and if I was home more than five hours a day that little puppy would be in Logan with me), and then we headed to Salt Lake for Karl's cousin's wedding reception. The food was delicious and it was super fun to get to talk with some of Karl's cousins, aunts, and uncles ( he has a lot and I mean a lot so I was lucky if I even picked out Karl's family from the groom's family).

Then on the way back from the reception, we went on an adventure to find Highland, which Karl has apparently always wanted to explore. We never found Highland, but we did go on an exciting venture down Parley's way. I lived 20 minutes away from it my whole life and had absolutely no idea it existed. I gotta get out more.

And then we got to go back to my parents house to visit with my sister Shae whose guts I love and who I hadn't seed in a long time so it was good to catch up. Plus, we got to eat dinner with my parents and I have to say, my mom has a lot more skill in the cooking department than her daughter, who only hopes to accumulate the skill my mother has one day, so it was nice to have a delicious meal my mom made.

Now it's back to another week of school and squeezing other things in between, like grocery shopping, since we have very little food left:)

P.S. I'm super bored with the meals I know how to make. Any really easy cooking recipes for two you guys know? I would love to have some new ideas to try out!

Grilled Basil Marinated Chicken!

SOOO Gourmet and SOOOO Easy

3 TBS Chopped Basil Leaves
1 TBS Olive Oil
1 TBS Chopped Red Onion
1 TBS Minced Garlic
1 Tsp Salt
1 Tsp Pepper
1 TBS Red Wine Vineager

4 Boneless Chicken Breasts (Leftovers!:))

You just put all the ingredients in a gallon zip-lock and toss your chicken in, zip and make sure chicken is coated. Leave in the fridge for 3-10 Hours (Make it in the morning before classes).

After the chicken marinades, just grill your chicken on that George Foreman I know you have! Toss the bag and marinade in the trash. Easy peasy pie. My favorite marinade!

I like to serve with a side of fruit and veggies.
